Tabouli
- 1 cup bulgur
- 1 cup water
- 2 tomatoes about 1 1/4 cups, diced
- ¼ cup red onion, finely diced
- ½ cup parsley, chopped
- ¼ cup mint, chopped
- 1 green onion discard the root end and use the whole thing - green and white parts, thinly sliced
- 1 tablespoon lemon juice
- ¼ teaspoon cumin powder
- ½ teaspoon salt
- 5 or 6 turns cracked black pepper
Boil water. Add bulgur. Turn off heat. Let sit for 15 minutes.
Mix everything together. Season with lemon, cumin, salt, pepper to taste but start with just a little.
